Today, I want to introduce Fenghua Xikou Melaleuca biscuits (千層餅), a famous and special snack in my hometown. I came from Ningbo, a city of Zhejiang province.
Fenghua XiKou, a town of Ningbo. It is the original place of Melaleuca biscuits. At first, Melaleuca biscuits is not famous in so many places, it is just a normal snack in Ningbo. According to relevant information, the Xikou Melaleuca biscuits originated in 1878 in the Guangxu Period of the Qing Dynasty and has a history of more than 140 years. The Xikou Melaleuca biscuit is called “the first biscuit in the world” but there is a reason. Fenghua Xikou is the hometown of Mr. Chiang Kai-shek. After he took power, Chiang’s family missed his hometown specialty. He sent someone to bake his hometown biscuits. He also constantly invited others to taste. gradually this little biscuit became more and more famous, and finally, it was hailed as "the world's first biscuit."
In August 2008, Jiang Jingguo's nephew Jiang Xiaoyan and his wife Huang Meilun returned to their hometown to worship their ancestors. After they tasted the Melaleuca biscuits in their hometown, they felt a lot of emotions and praised them. They specially brought Melaleuca biscuits to Taiwan’s relatives and friends. So that they achieved their root-seeking journey.
Generally speaking, there are two tastes. One is sweet(the white one in the following picture) and the other is seaweed taste(海苔口味)(the green one in the following picture). They all taste crisp. However, I prefer seaweed taste more.😉
It is difficult to explain how to make it, but I always wondered that although we called it “Melaleuca” biscuits, how many layers it has actually? After I search the internet, I found the answer. The Melaleuca biscuit has a total of 27 layers, but the thickness is only about one centimeter, and the length and width are about 5 centimeters.
